The Mid Mo Smoke Show 10-21-17 Return From The Gathering

Recipe: Stuffed Mushrooms

  • 12 whole fresh mushrooms

  • 6 strips of thin bacon

  • 1 8oz pack of cream cheese

  • ¼ cup of parmesan cheese

  • ¼ cup shredded cheese

  • 1 TBS of minced garlic

  • ¼ TS pepper

  • ¼ TS cayenne pepper

  • 2 TBS of favorite rub

1. Preheat smoker to 300 degrees. Clean mushrooms with a damp paper towel. Carefully break off stems and scrape the gills out.

2. Mix garlic, rub, cream cheese, parmesan cheese, pepper and cayenne all together. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Once filled wrap each mushroom with ½ slice of bacon.

3. Smoke for 20 minutes or until the mushrooms are piping hot and liquid starts to form under caps.

4. Once done sprinkle shredded cheese on top of each mushroom and then enjoy.
