MidMo Smoke Show - Ep 7 5/13/17

Here's the SmokerBuilder approved Basic Poultry Brine recipe we talked about on the show.

1.5 quarts water

1/4 cup kosher salt

1/4 cup brown sugar

1.5 quarts crushed ice

Heat water, salt and sugar until water completely clears. Do not boil because it takes too long to cool water back down to 38 degrees F

Then after water mixture clears, add:

1 tsp garlic

1 tsp onion powder

1 tsp Cajun seasoning

Next add the ice to cool the mixture quickly. Then stir and put in fridge until mixture is below 40 degrees F. Next soak chicken parts for about 1.5 hours. Before cooking, rinse and pat dry, then apply favorite rub.
