The Mid Mo Smoke Show 9-9-17 Rubs and Sauces

Recipe: Pig Time Sauce

1 cup ketchup

1 cup light brown sugar

¼ cup apple cider vinegar

¼ cup honey

⅛ cup of fresh squeezed lemon

2 TBS of your favorite rib rub (sweet)

½ TBS salt

¼ TBS pepper

1 TSP Cayenne pepper

-Combine apple cider vinegar and brown sugar together in a medium sauce pan. This is called a gastrique. once the brown sugar is reduce let it simmer for about 5 minutes. then add in all the ingredients except 1 TBS of your favorite rub, leave it aside for now. bring to a boil then reduce to a very low simmer, stirring every 4-5 minutes. After that remove sauce from heat and add the last TBS of rub. it is vital to let the rub cool then store in the fridge overnight to help blend all the flavors together.
