MidMo Smoke Show - Ep 6 5/6/17
Mike has returned to us and has a guessing challenge for the Czar. This week we're discussing preparation and wood pairings for different cuts and grades of meats. We look back at last weeks twitter polls. And as always, we give you the recipe of the week.
Here's the Poor Man's burnt ends recipe we talked about on the show.

3 lbs beef chuck roast
1 tablespoon kosher salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 bottle of your favorite BBQ sauce (I used my homemade Honey BBQ)
2 tablespoons brown sugar
3/4 cup of Beef broth
Fire smoker to 275 degrees. Mix salt, pepper and garlic together and rub the roast. Smoke until internal temperature of 165 then wrap with 3/4 of beef broth. Back on the smoker until internal temperature is 195. Pull off, vent and rest in a cooler. Once it rested about 1 hour cut the roast into 1' square, sauce, place in foil pan, then back on the smoker at 250 degrees for about 15 minutes!
